The coffee comes from Colombia, from the Rio Sucio region in the department of Caldas, produced by Siruma Coffee. This company works with farmers in the Cauca, Caldas, and Tolima regions and emphasizes transparent trade and fair conditions for local communities. The Castillo and Colombia varieties, grown at an altitude of 1,600-2,000 meters above sea level, provide the basis for a clean and structured flavor profile. Castillo is prized in Colombia for its resilience and consistent quality in the cup, which is reflected here in its balance and pleasant sweetness.

After being washed, the coffee was decaffeinated using the sugar cane decaf method at the DESCAFENOL plant. This process uses natural ethyl acetate obtained from sugar cane, which gently removes caffeine and preserves the maximum of the original flavor character. The result is an espresso with minimal caffeine but full flavor, which is clean, sweet, and ideal for moments when you want to slow down, not stop.
