ACC is an association of farmers from the Cauca region of Colombia, founded in 2016 by Robinson Rivera with the goal of improving the quality of local coffee and offering growers a sustainable and meaningful alternative. Today, the association has 77 members whose small farms are located at altitudes of up to 2,100 meters above sea level. The volcanic soil and cooler climate give the coffee a bright acidity and pleasant sweetness. ACC also has its own laboratory and a small fermentation center, where natural and honey-processed coffees with distinctive character are produced.
The coffee is processed directly on individual farms—hand-picked cherries are pulped, fermented for 12 to 18 hours depending on conditions, and then washed and dried. Thanks to this, each part of the harvest has the opportunity to contribute its own flavor and character to the final lot. The Castillo variety was bred specifically in Colombia for greater resistance. It offers a beautifully balanced profile with a delicate sweetness, medium acidity, and a pleasantly clean body.
