Colombia El Silencio from Ostrava-based Father's Coffee Roastery is a beautifully balanced filter coffee that combines juicy fruitiness with subtle elegance and clarity in the cup. The very first sip reveals fresh notes of lime, which gradually give way to a sweeter flavor reminiscent of peach jam. The entire profile is complemented by a subtle finishof black tea and cashews. The coffee feels light, harmonious, and very approachable, making it enjoyable for both experienced pour-over enthusiasts and those just starting out with specialty coffee.
The coffee comes from the El Silencio farm in Colombia’s Cauca region, specifically from the Piendamó area, where it is grown by producer Robinson Rivera, a member of the ACC association. This area is known for its ideal conditions for coffee cultivation—high altitude, fertile soil, and a stable climate. Coffee trees here grow at an altitude of around 1,740 meters above sea level, which allows the cherries to ripen slowly and develop complex flavors. Coffee from El Silencio embodies not only the character of the local terroir but also the hard work and long-term dedication of a farmer who is helping to build stability and a better future for his community.
This lot consists of the Castillo variety, which was processed using the honey method. After harvesting, the skin is removed from the coffee cherries, but some of the sweet pulp remains on the bean during drying. Thanks to this, the coffee retains greater sweetness and a fuller body, while still maintaining the clarity and elegance typical of washed coffees. The result is a complex yet very drinkable filter coffee that shines when brewed using methods such as V60, Aeropress, Chemex, or French press.
