Guji is a renowned coffee region in southern Ethiopia, known for its rich volcanic soil and forested farms. It was here, in the hills of Odo Shakisso, that the Suke Quto farm was established in response to the devastating fires of the late 1990s. Founder Tesfaye Bekele proposed restoring the destroyed landscape by planting coffee trees and shade trees. The farm works with more than 170 small farmers in the area and is certified by The Rainforest Alliance for its sustainable and environmentally friendly methods . The coffee grows at high altitudes, where the cherries ripen slowly, developing a rich aroma and complex flavor. The resulting profile is bright, sweet, and elegant, with notes of tropical fruit, citrus, and a subtle tea aftertaste.
At Suke Quto, coffee processing begins with a careful hand selection of the ripest cherries, which are then hulled, leaving some of the sweet mucilage on the beans – this processing method, known as the "honey" method, gives the coffee its characteristic sweetness and rich floral notes. The cherries are dried on raised African beds, first in the sun for three days, then in the shade for another 12–14 days. The slow drying process preserves the sweetness, purity, and complex flavor.
