The cup reveals notes of orange blossom, white tea, and nectarines, which together create a fresh and harmonious character. The acidity is gentle and juicy, reminiscent of ripe stone fruit, while the overall profile feels light, airy, and very easy to drink. The result is an elegant cup with a long, clean finish and delicate floral aromas.
The foundation of this spring blend is a strong partnership with producers. Half consists of beans from the Ethiopian village of Keramo in the Sidama region, tended by long-time partner Assefa Dukamo and his family. Thanks to the excellent accessibility of the processing station, local farmers can deliver fresh cherries every day, ensuring maximum quality and freshness. The other half consists of coffee from the Kirinyaga region of Kenya, produced by approximately 800 smallholder farmers who collaborate with the Kabingara station. Attention to detail and meticulous processing are key here.
Both components are processed using the washed method, which emphasizes the purity and precision of the flavor profile. After the husk and pulp are removed, fermentation takes place in water followed by washing, which helps highlight the beans’ natural character. Drying occurs on African beds, where the coffee is regularly monitored and protected from direct sunlight and moisture to ensure an even result. This results in an elegant, distinct, and high-quality cup.
