BirdSong Coffee’s Organic Ethiopia GOYO is a delicate, clean, and beautifully floral coffee with a light and elegant character. The cup first reveals a distinct orange blossom note, giving the coffee a fresh and aromatic start. This is followed by sweet stone fruits, which bring juiciness and a gentle, fruity richness. The entire profile is then complemented by a light Earl Grey tea note , which lends the coffee smoothness and a pleasant aftertaste. The body is rather light and airy, with a gentle and balanced acidity. The result is a coffee that feels natural, clean, and very harmonious—ideal for a leisurely sip from a pour-over.
The coffee comes from the Hambela region in Ethiopia’s Guji zone, specifically from the village of Tirtira Goyo, from which it takes its name. Coffee trees here grow at an elevation of 2,100–2,200 meters above sea level in an environment with a cooler climate and fertile soil, which contribute to the development of a complex flavor profile. Farmers traditionally grow coffee in agroforestry systems, that is, among other crops and under the natural shade of trees. This farming method supports biodiversity, protects the soil, and creates an ideal microclimate for the slow ripening of coffee cherries. Production is carried out by small-scale growers who work with respect for nature and the local community.
Processing is done using the washed method. After harvest, the cherries are pulped using an eco-friendly Penagos pulper, which significantly reduces water consumption. The coffee , still in its parchment , is then briefly soaked and dried on African beds for approximately 10 to 15 days until it reaches optimal moisture content. Thanks to the high altitude and suitable conditions, drying proceeds evenly and slowly. This process helps preserve the coffee’s clarity, floral notes, and delicate texture, which are characteristic of this region.
