Ethiopia LALESA – black honey from the Ostrava roastery Father's Coffee Roastery is a coffee that combines complexity and elegance with notes of peach, lime blossom, and bergamot. This profile brings a delicate fruity sweetness, supported by floral and citrus accents, which give the coffee freshness and a full body. The black honey processing method emphasizes sweetness and depth, making this coffee unforgettable for filtered preparations such as V60, Chemex, or Aeropress.
The coffee comes from the Gedeb region of Ethiopia, where it is grown at an altitude of 2,150–2,200 meters above sea level on small farms that work with Ephtah Specialty Coffee. This coffee is the result of long-term work by farmers and the local community, which focuses on sustainability and improving living conditions. Processing takes place at the Lalesa station, the largest washing station in Gedeb, where up to 250 seasonal workers are employed during the harvest. A children's corner has been set up right next to the station for workers and their wives, who often make traditional baskets that are sold on, creating additional sources of income for the local community.
This coffee is processed using the black honey method, which enhances the sweetness and texture of the coffee cherries and adds subtle floral and citrus notes. After harvesting, the cherries are carefully sorted, floated, and then dried on raised beds for 12 to 15 days. This method allows the coffee to retain its complexity and balance, making it an excellent choice for filter brewing. Ephtah Specialty Coffee, which operates the station, emphasizes transparency and the equal role of women in the coffee chain. The cooperative provides farmers with premium payments and support, including advance payments upon delivery of coffee and tuition fees. They also plan to invest in water tanks, expand drying capacity, and grow other crops for the local market.
