The beans come from the Alo Village farm, run by Tamiru Tadesse, a young producer with an eye for detail and quality. His farm is located in the Bensa region of southern Ethiopia, at an altitude of 2,450 meters above sea level, where coffee trees grow in ideal conditions. The long ripening of the fruits in a cooler climate contributes to their complex flavor profile. Tamiru is known for his emphasis on careful processing and a sustainable approach, thanks to which his coffees are regularly ranked among the best the region has to offer.
This selection is processed using the honey method, which combines the precision of the washed process with the sweet character of natural coffees. The cherry skin is removed after harvesting, but some of the sweet pulp remains on the bean during drying, resulting in a coffee with a more pronounced sweetness, a smooth body, and a more delicate acidity. The JARC 74158 variety shows its softer and more floral side in the honey process, without losing any of its purity or depth.
