Chapata is a coffee from Father's Coffee Roastery that you'll want to have in your grinder every day. It's warm, approachable, and incredibly inviting. Its profile features a fascinating interplay reminiscent of the depth and complexity of orange wine, accompanied by a sweet and juicy note of chocolate-covered sour cherries. The experience is rounded out by cocoa, which gives the cup stability and a sense of true comfort. It’s love at first sip, and you’ll happily return to it for its clarity and harmony, whether you prepare it as a morning ritual or an afternoon filter coffee to unwind.
The story of this coffee takes us to the Anserma region in the Caldas department, where, at an altitude of 1,800 meters above sea level, the Anserma cooperative operates under the leadership of General Manager Luis Miguel. This community brings together over two thousand small-scale farmers for whom coffee is not just a job, but a lifelong mission. To protect the quality of their best micro-lots, they have invested in technologies that are unparalleled in this demanding and unpredictable climate. They built temperature-controlled warehouses to protect the coffee from fluctuations in heat and humidity, and Luis Miguel also opted for unique Nuna drying boxes. It is precisely thanks to these innovations that Anserma can produce natural coffees with such a clean flavor profile—something that was previously nearly impossible in this rainy region. The hardy Castillo variety, combined with the visionary approach of the local people, transforms its classic character into an unexpectedly rich and modern profile.
What gives Chapata its complex and distinctive wine-like character is the precise alchemy during processing. It all begins with Luis Miguel’s rigorous hand-sorting of only the ripest cherries. These are then sealed in airtight barrels, where they ferment for an incredible 96 hours without oxygen exposure. It is precisely this long phasethat is responsible for the depth, wine-like structure, and sweet notes of chocolate pralines with sour cherries. This absolute control over temperature and humidity ensures that the sugars in the bean stabilize and the resulting cup retains a crystalline clarity of flavor.
