The coffee comes from Colombia and is produced by farmer Sebastian Ramírez from the El Placer farm . The Caturra variety is grown here at an altitude of 1, 600 meters, where it has ample space to develop its sweetness and clean flavor profile. Sebastian first hulls the ripe coffee cherries and removes the remaining pulp through fermentation in a water bath. He then washes the parchment beans with clean water and dries them for 15 days on shaded patios. It is precisely this meticulous approach to processing on the farm that helps preserve the clarity of flavors and the pleasant sweetness that is characteristic of this coffee.
After drying, the beans are hulled and sent to a facility in Manizales, where decaffeination takes place using the EA method— that is , with ethyl acetate derived from sugarcane. The beans are immersed in a solution that, at a controlled temperature, removes 99% of the caffeine without unnecessarily altering their flavor profile. The coffee is then machine-dried and prepared for export. The result is a washed decaf that retains its sweetness, clarity, and fruity-cocoa profile, and works perfectly in a V60, Aeropress, batch brew, or Pulsar, as well as in an espresso machine.
