Pink Bloom is a blend from the Warsaw-based roastery Foundation Coffee, combining Colombian coffee from the Tolima region with Indonesian coffee from Bener Meriah. The result is a full-bodied, silky cup with a long, lingering finish, where pomegranate and pink grapefruit add freshness and vibrancy, while dates and cane sugar contribute depth and sweetness. A coffee that surprises with its fruity complexity yet remains pleasant for everyday drinking.
Pink Bloom builds on the meeting of two very different coffee worlds. Colombia, specifically the Tolima region, is known for its natural sweetness and fruity liveliness, while Indonesia’s Bener Meriah in Aceh brings fullness, body, and characteristic depth to the cup. It is precisely this interplay between two distinct characters that makes the blend interesting. Foundation Coffee uses blending as a tool to achieve a complexity that a single-origin coffee would struggle to attain, and Pink Bloom is an example of just how well this can work.
Each of the two components of the blend undergoes a different processing method, which in itself contributes to the resulting complexity of the cup. The Colombian coffee is processed using the washed method, in which the cherries are pulped after harvest and the beans ferment in water before slow drying. This approach emphasizes purity and the natural expression of the variety. The Indonesian component, on the other hand, undergoes anaerobic fermentation, where the cherries ferment in an oxygen-free environment, which promotes the development of more complex and intense flavor compounds. The combination of both approaches then gives Pink Bloom its light, playful character.
