The taste combines the delicacy of black tea with refreshing citrus notes of lemongrass and a playful sweetness reminiscent of cactus popsicles. The cup is light, clean, and accessible, with a pleasant texture and an effortless sweetness in the finish. This espresso is neither heavy nor overly intense, but beautifully drinkable and addictive.
This coffee comes from forty female farmers from the Villa Corzo community in the Mexican state of Chiapas, specifically from the La Concordia area. It is part of the Café Delas project , which focuses on supporting women in the coffee sector and their greater involvement in coffee cultivation, processing, and trade. Each lot comes exclusively from female producers, and part of the proceeds are returned to educational and development programs in the area. The Villa Corzo region is renowned for its fertile soils, stable climate, and long tradition of coffee cultivation, which is reflected in the clean and balanced character of the local beans.
The beans arewashed, which brings out the natural freshness and tea-like elegance of the coffee. The ripe cherries are hand-picked, then hulled and fermented for 12 to 17 hours. After washing, the coffee is dried in the sun, either in the farmers' yards or on traditional drying beds called zarandy. The result is a clean, precise cup with a bright flavor and a light, refreshing expression, ideal for espresso.
