The Chania Estate has been owned by the Harries family for several generations. It is one of the last two remaining medium-sized farms in Kenya. The Chania Estate is situated on deep volcanic red soils and spans 73 hectares. The estate is located near the town of Thika, on the banks of the Chaina River. The houses that Boyce and his family provide for the workers have clean water and electricity, as well as many other facilities, such as a community hall and a kindergarten. The Harries family is very active in the local community; they have donated more than 50 acres of land to the Thika City Council and are co-founding the Wabeni Technical Institute. The institute aims to teach disadvantaged children practical skills that can help them earn a living in the future (e.g., tailoring, auto mechanics, carpentry). The varieties grown on the farm are mainly Red Bourbon; other varieties include Ruiru 11, K7, SL 28, and the Batian variety.
In the washed process, the cherries first pass through a pulper, which removes the skin and pulp. The remaining green beans with pulp residues are then fermented for several hours to make it easier to separate the remaining pulp. After fermentation, the beans are washed with water to remove residual sugar. The coffee is then sun-dried on concrete patios or raised beds. In some cases, mechanical dryers are used if outdoor conditions are unsuitable. The resulting coffee processed using this method has a cleaner flavor, higher acidity, and distinct fruity notes.
