This micro-lot is the result of a collaboration between two fascinating projects at the foot of Mount Elgon in the Sironko district of Uganda. The central figure is Norman Mukuru, a coffee expert with twenty years of experience who founded The Coffee Yard. The name "Muki" was created by combining the names of a strong team—Norman Mukuru and Maria Kirya, who oversees uncompromising quality here. Coffee trees of the SL28, Nyasaland, and SL14 varieties grow here at extreme altitudes between 1,800 and 2,000 meters above sea level, giving the beans ample time to accumulate sugars.
Behind the incredible body and fruity explosion of Muki Fruity lies a precisely tuned natural processing method. Norman Mukuru has been intensively dedicated to this method since 2018 and refines his techniques every season. The entire process begins with strict sorting of the cherries using the so-called "floating" method, where lower-quality pieces are separated. This is followed by a unique “drip drying” phase on raised beds, which removes the cherries’ initial moisture before fermentation begins. Fermentation takes place in open tanks, where, under the team’s supervision, the sweet and fruity notes we love so much in coffee develop. Drying then takes approximately 21 days, until the moisture content drops below 12%. The coffee is then allowed to rest so that its flavor profile can harmonize and stabilize. The result is a coffee with a perfectly clean yet extremely rich profile, demonstrating that natural processing in the hands of a master can conjure up incredible things in the cup.
