The Keramo coffee producers live high up in the beautiful Bombe Mountains. Approximately 1 ,500 farmers from various parts of the mountain range supply their coffee to the Keramo Adara processing station operated by Daye Bensa. The main varieties are JARC 74112 and locally cultivated varieties. Coffee trees here grow at incredible altitudes exceeding 2,300 meters above sea level, which makes the local coffee beans very dense and smaller in size. Thanks to its high altitude, the Keramo Adara station has built an excellent reputation and earned Daye Bensa the prestigious Cup of Excellence award in 2020, 2021, and 2022.
This lot underwent natural processing. The coffee cherries are dried whole, with their pulp intact, on African drying beds, clean plastic screens, and tarps for approximately 14–18 days. During drying, the cherries are carefully monitored to ensure they dry evenly. After drying, local workers hull the cherries, and the resulting beans are then transported to Addis Ababa, the capital of Ethiopia, where final sorting takes place. It is precisely this slow drying of the whole cherries that helps develop the fruity and sweet character of this coffee.
