Full-bodied, juicy, and distinctly fruity—that’s this Peruvian coffee from the Czech roaster Kmen Coffee Roasters. In an espresso, sweet wild berries and juicy cantaloupe melon come to the fore at first, gradually giving way to the delicate flavor of amaretto pralines. The result is a full-bodied, sweet cup with a long finish, where the fruitiness meets a pleasant almond character. The natural processing further enhances the pronounced sweetness, fuller body, and more intense fruitiness, making this coffee a delight especially for lovers of bolder espresso.
The coffee comes from the village of El Paraíso in the Cajamarca region of Peru, specifically from the province of Jaén and the district of Huabal. The village is situated atop a small mountain at an elevation of approximately 2,000 meters, and the surrounding area consists of small farms with an average size of about 1.5 hectares. This lot is created by combining daily harvests from producers in El Paraíso and the surrounding area, who harvest and process the coffee themselves. The beans come from the Caturra and Pache varieties, and the coffee trees in the region grow at an altitude of approximately 1,800 to 2,050 meters.
For this natural-process lot, the coffee cherries are left to rest for 36 hours after harvest and are then slowly dried for approximately 35 days. Producers in the region primarily use paved terraces, where the coffee is protected from direct contact with the surface by a mat. In natural processing, the coffee is dried inside the whole cherry, which generally results in a sweeter, fuller, and fruitier character.
