This coffee comes from the El Silencio farm, owned by Robinson Rivera, a farmer with eighteen years of experience in coffee cultivation. The farm is located in the village of Once de Noviembre in the Piendamó area of the Cauca region, at an altitude of 1,740 meters. On the 8-hectare farm, most of which is dedicated to the Castillo variety, Rivera focuses on quality and sustainability. As a member of the Asociación de Caficultores del Centro del Cauca por la Paz, an association focused on improving coffee quality and farmers' living conditions, he also contributes to positive change in the region. Along with other members, he works towards environmental protection and supports peace.
The Honey processing method used by Rivera on the farm gives this coffee its characteristic sweetness and complexity. Ripe cherries are carefully selected and initially float in water to remove defective fruits. After a 12-hour initial fermentation in the air, the cherries are de-pulped, leaving some of the sweet pulp on the beans. The subsequent fermentation lasts 36 hours, during which the flavor profile continues to develop. The beans are then dried in parabolic dryers for 5–6 days until they reach the ideal moisture content of 10%. This precise process ensures a balanced combination of sweetness and pleasant acidity, making the El Silencio coffee unforgettable.
