Ethiopia Uraga from the South Bohemian roastery Kmen is a fruity ride reminiscent of a bowl of freshly picked summer fruit. Sweet yellow peaches, juicy mirabelle plums, and fresh pomegranate come together in the cup. The sweetness of the peaches lends the coffee a velvety smoothness, the mirabelle plums add a subtle tartness, and the pomegranate pleasantly brightens the entire profile. The result is a bold, juicy, and playful drip coffee for anyone who expects a generous dose of fruit from Ethiopian coffee.
The coffee comes from the Uraga processing station in the Guji region. This region was formerly part of Yirgacheffe, but thanks to its specific microclimate and the distinctive character of the local coffees, it has gradually established itself as a separate growing region. This lot is a blend of traditional Ethiopian heirloom varieties and cultivated varieties. The cherries at the station are supplied primarily by small-scale farmers who grow coffee trees using traditional methods and harvest them by hand.
The greatest charm of this lot comes from its processing using the carbonic natural method, which employs the principle of carbonic maceration—a technique also known in the world of wine. After careful sorting, perfectly ripe whole cherries are sealed in containers with an environment rich in carbon dioxide, where controlled fermentation takes place. These specific conditions promote the activity of different microorganisms than those found in conventional processing, helping to create intense fruity notes. After fermentation, the cherries are washed and slowly dried on elevated African drying beds. Regular turning ensures even drying, resulting in a sweet, clean, and exceptionally fruity cup.
