Behind this coffee is the family-run La Nueva Montana farm, led by Antonio Gonzalez and his wife Eby Aracely Samayoa. The farm is located in the Fraijanes region of El Palmar at an elevation of 1, 200 meters, where volcanic soil and cool nights create ideal conditions for growing the Catuai coffee variety. Antonio and Eby have long been working to improve quality while ensuring better conditions for their employees and family. Their work involves caring for every bean from harvest to fermentation, with the goal of bringing to the cup the distinctive, sweet, and clean flavor typical of Guatemalan coffee trees.

The coffee was processed using the natural method, meaning the whole cherries were dry-cured directly on the farm. The cherries are carefully selected when ripe and undergo controlled fermentation for a maximum of 14 hours; they are then washed and dried for approximately 20 days on raised African beds, being turned regularly four times a day. This process allows the sweetness of honey cookies and the juiciness of sour cherries to be locked into the bean, while preserving the delicate creaminess of the body and the complexity of the aroma.

The capsules
