Imagine a coffee whose texture and clarity are reminiscent of fruit nectar. That’s exactly what the natural Ethiopian Bombe Chilaga is like. At the forefront of this masterpiece is the sparkling and unmistakable flavor of garden strawberries. The vibrant fruitiness is fantastically balanced by the deep and captivating sweetness of peaches. The finish of this sensory experience is then completely dominated by rich honey. This lends the coffee a silky-smooth body and a long, sweet aftertaste. It is an exceptionally refined and pure beverage that will delight any lover of sun-kissed and very rich flavor profiles, regardless of the brewing method used.

This breathtaking coffee micro-lot comes from the renowned Bensa area, located in the famous Ethiopian region of Sidama. This is the place from which the most distinctive African lots currently originate. The local plantations are situated at extreme altitudes exceeding 2, 100 meters above sea level. This high-altitude environment ensures a very cool microclimate, which significantly slows down the ripening process of individual coffee cherries. The cherries thus have much more time to absorb nutrients from the rich soil, resulting in an exceptionally complex and deeply sweet flavor profile. Growers in this area adhere to traditional farming practices passed down through generations. Every cup brewed thus captures the utterly authentic character of the Ethiopian terroir and clearly demonstrates why coffees from the Bensa region are considered among the most intriguing on the global market.

After carefully hand-picking the ripest cherries, traditional natural processing followed. Unlike washed methods, the harvested fruits are not hulled but are dried completely intact—along with their thick layer of sweet pulp—on elevated African drying beds. Over the course of long weeks of slow drying in the sun, all the fruit’s juiciness and the enormous concentration of natural sugars gradually permeate directly into the internal structure of the bean itself. This process requires immense care, regular turning, and constant monitoring to prevent unwanted over-drying or fermentation. It is precisely this impeccably clean processing that accounts for the resulting beverage’s extremely high sweetness, beautifully juicy body, and incredibly long, smooth, and harmonious finish.

Juicy, fruity, well-balanced. Sweet. It’s not listed in the flavor profile, but when I brewed it in a V60, I detected a pleasant hint of cinnamon cookies. Then I used up the whole bag on vacation with my AeroPress :) A pleasant surprise—I’d love to try this coffee again if it’s available :)
