This time, you’ll find beans from Mexico with a flavor profile of grape lemonade, butter cookies, pomelo, and yellow kiwi. It’s delicate, fresh, and fun, making it a perfect fit for your daily pour-over or whenever you’re in the mood for something light, juicy, and a bit playful. It’s part of the “When You’re Just Exploring” collection—a coffee that’s pleasant, approachable, and still interesting enough to keep you coming back for more.

The beans come from Mexico, specifically from the Chocaman region of Veracruz, from the Finca El Plátano farm. The producer is Marisol Ramírez Serrano, who grew up in a family of coffee growers and has been close to this craft since childhood. Under her father’s guidance, she learned how to work sensitively with the coffee trees and the nature around them, and gradually developed a deep respect for coffee as a whole process. Today, Marisol holds the title of Q-grader and, on the family farm, combines modern practices with the history of the place, sustainable agriculture, and an emphasis on the quality of every bean.

This coffee is a blend of Bourbon, Caturra, and Colombia varieties and was processed using the washed method. The cherries are first hulled, sorted, and then fermented for 24 to 36 hours before washing. After washing, the parchment coffee is dried on raised African beds for an average of 7 to 14 days to preserve its purity, stability, and a pleasantly distinct flavor profile. It is the washed processing here that helps preserve the freshness of pomelo and yellow kiwi, while sweeter notes of grape lemonade and butter cookies add roundness and a gentle playfulness to the cup.

Hello,

I have the current batch of this coffee at home and have tried it a few times in an AeroPress. So far, it’s a fairly mild and unremarkable coffee compared to others. Sometimes I see information on coffee packages about when, based on the roast date, the coffee should taste its best. Is there generally any such information available for this coffee? Is there a general rule of thumb regarding this, or does it vary greatly from person to person?

Coffee usually develops its full flavor two weeks after roasting, but it can easily take a week or two longer. With the AeroPress, a finer grind, a slightly higher temperature, or a longer brew time might also help.
