Mexico JUBA from Industra Coffee is an espresso that will win you over with its richness, sweetness, and distinct chocolate character. The coffee comes from the Guerrero region of Mexico, where most of the production takes place in the mountainous areas of the Sierra de Atoyac. It is here that coffee cultivation has a long history, and local farmers specialize mainly in naturally processed lots, which is quite exceptional in Mexico. The JUBA project is the brainchild of the Ensambles Cafes Mexicanos initiative and agronomist Miguel Guevara, who has been helping local producers improve production quality and access to the specialty market since 2017. The project was originally founded by a group of women who began calling themselves “Evas,” and the name JUBA means “mountains” in the indigenous Mephaa language. Thanks to collaborative work and training, the project has grown over the past few years from a handful of producers to dozens of farmers across the region.
Processing is done using the dry, or natural, method, which is typical for Guerrero. After selective hand-picking, the whole cherries are sorted using flotation and then slowly dried, often on raised beds or platforms. During drying, sugars and fruity notes from the pulp are transferred to the beans, giving the coffee its distinctive sweetness, fuller body, and characteristic notes of dates and plums. The result is an espresso with an intense, sweet, and chocolatey profile that beautifully showcases the unique character of natural Mexican coffees.
