Full-bodied, syrupy, and distinctly sweet. That’s the Colombia MANOS JUNTAS fromNot Another Boring Roastery, which prides itself on meticulous fermentation. The cup is dominated by cranberry jam, chocolate, and caramelized sugar, complemented by a candy-like sweetness and a slightly rum-like, juicy acidity. The profile is deep, structured, and long-lasting, with pronounced sweetness and a full body that feels almost syrupy. It is an omni-roast with a distinct yet rich character.
The coffee comes from the Cauca region, specifically the Popayánarea, and is processed at the Manos Juntas Micromill. This micromill serves as a central processing hub for smallholder farmers in the surrounding area. Producers can fully focus on cultivation and selective harvesting, while the fermentation, drying, and stabilization processes themselves are carried out under the supervision of an experienced team. The altitude here ranges from 1,400 to 2,000 meters above sea level, which, together with volcanic soils and a stable climate, promotes slow ripening of the cherries and higher bean density.
The lot is processed using the natural method. After manual harvesting and sorting, controlled fermentation of the whole cherries takes place, followed by slow drying on raised beds or in solar dryers for approximately 30–45 days. Slow drying allows for the even development of sweetness and fruity notes. Once the target moisture content is reached, the beans stabilize and are then dry-milled. The result is a sweet, full-bodied, and aromatically distinctive cup with a long finish.
