Fluffy Petals from DAK Coffee Roasters in Amsterdam is exactly the beautifully fragrant Ethiopian coffee we all imagine. The flavor profile features violet blossoms, citrusy freshness, roasted peach, and a slightly hoppy finish that gives the coffee an unexpectedly elegant and juicy character—ideal for any lover of delicate, tea-like coffees with a floral touch.

The coffee comes from Ethiopia, specifically the Gedeb region, which is one of the most distinctive coffee-growing regions in the south of the country. The origin refers to the Lalesa processing station. It works with coffee from smallholder farmers in the surrounding area, who deliver ripe cherries to the station for processing. Lalesa is affiliated with Ephtah Specialty Coffee, a community-focused exporter that prioritizes quality, long-term relationships with farmers, and support for women in the Ethiopian coffee sector. Thanks to its high altitude, local microclimate, and traditional Ethiopian varieties, this coffee has a typical floral and fruity character that comes across as clean, delicate, and elegant in the cup.

The variety is Heirloom, a local Ethiopian variety that often brings floral notes, citrus freshness, and complexity. It is washed-processed, resulting in a clean, bright, and beautifully defined cup. In the washed method, ripe cherries are first sorted after harvesting, then the skin and part of the pulp are removed, and the coffee ferments in water or tanks to release the remaining mucilage layer. The beans are then washed and dried, often on raised beds. It is this process that allows Fluffy Petals to showcase its violet aroma, citrus sparkle, the sweetness of roasted peaches, and a long floral finish.

For my usual cortado I feel it's roasted too far, as I get a burnt/bitter aftertaste. But works for flat whites

It has a very delicate flavor; I feel like it has more potential, but I can't seem to bring it out.
I love DAK’s coffees, but every once in a while I come across a coffee that I just can’t seem to extract properly. If you’re the type who likes to tinker, you definitely won’t have a problem with that. But if you’re a bit of a punk like me, you might have a similar experience.
