Heirloom coffee comes from the Gedeb region in the Gedeo area of Ethiopia, located south of the famous Yirgacheffe. It is processed at the Lalesa washing station and grown at an altitude of 2,150–2,200 meters above sea level. Thanks to the slow ripening of the cherries in a cooler climate and volcanic soil, the coffee acquires a distinctive sweetness and complexity.
Farmers here grow heirloom varieties under the canopy of local trees and companion plants, maintaining a rich, semi-forest ecosystem that protects biodiversity and helps preserve the delicate flavors for which Ethiopia is renowned. After harvesting, the coffee cherries are processed using the dry method (natural), which allows the fruit sugars to permeate the beans and enhance their full, velvety texture.
