The heart of this exceptional bean beats in the Lara region, in the Humocaro Alto area, where the Rivero family farm lies on the steep slopes of the Andes. The local microclimate and high altitude of up to 1,650 meters above sea level provide the Catuai and Castillo coffee trees with ideal conditions for slow ripening and the development of complex sugars. The Rivero family cares for their 20 hectares of land and 55,000 coffee trees with a love that has been passed down through generations. Processing is carried out using the classicwashed method, which emphasizes the purity of the flavor profile. After being harvested by hand, the cherries are sorted in tanks of water (known as floating) and then mechanically stripped of their skins and pulp. After controlled fermentation, the beans are dried for approximately 20 days on raised beds. This process ensures that the coffee's natural characteristics stand out without any off-flavors.
