The coffee comes from the Aceveda area in the Huila region, where it is grown by small-scale farmers at elevations ranging from 1, 600 to 1,900 meters. The Caturra and Colombia cherries are then sent to the Peñas Blancas processing station, run by Nestor Lasso and Jhoan Vergara. The name “Sacha” itself comes from an indigenous language spoken in the Andes and the Amazon and means “wild forest,” a reference to the lush natural landscape of southern Colombia, where the coffee originates. The station serves as a shared facility for smaller producers, giving them access to high-quality processing, quality control, and other expertise related to harvesting and drying. Sacha is therefore not a single-farm coffee, but the result of collaboration between local growers and a single processing center.
After harvest, fully ripe cherries are selected, sorted, and hulled. This is followed by controlled fermentation, during which the remaining pulp is gradually removed from the parchment beans. The coffee is then thoroughly washed with clean water and slowly dried under controlled conditions. It is precisely this washed processing method that brings out the beans’ natural sweetness and fruity character while keeping the resulting cup clean and well-defined.
