This isn't just another boring Ethiopia!Not Another Boring Roastery has roasted a modern, juicy filter coffee that makes sense from the first sip. In the cup , expect citrus, honey, and ripe fruit notes, supported by a light, elegant body and a very pleasant, juicy acidity. It's the type of Ethiopian coffee that will delight lovers of bright, clear flavors: the sweetness is not heavy, but rather reminiscent of floral honey, and the fruitiness is sparkling and fresh. 

The origin of this coffee leads to the Sasaba Washing Station, a respected processing station with a long tradition of cooperation with small growers from the surrounding hills. The coffee grows at high altitudes of around 2 ,000–2,150 meters above sea level, where cooler nights and the shade of trees slow down the ripening of the cherries and bring a more complex aroma. Farmers live in communities where knowledge is passed down through generations, and they grow coffee trees in harmony with local biodiversity, without unnecessary chemical inputs. The station works with more than 500 growers, emphasizing fair prices and offering training and practical support—from agronomy to harvest sorting. Thanks to a stable background, it has been possible to maintain high quality and a consistent profile year after year.

Processing iswashed and extremely careful. After manual harvesting, leaves and impurities are separated , the cherries are sent to the station and , after hulling , ferment for 48-72 hours to naturally release the pulp. This is followed by thorough washing and drying in parchment on African beds for about 7-8 days. During drying, the beans are turned regularly to achieve uniform moisture and a clean flavor without unwanted fermentation. The result? Washed Ethiopia at its best: a fresh citrus note, the delicate sweetness of honey, juicy fruit, and a light, elegant body that is great to drink all day long.
