This limited-edition Colombian coffee from Industra Roasters is anything but ordinary. Behind this coffee is the family-run Patio Bonito farm in Colombia’s Cauca region, where Carlos Arturo Trujillo has dedicated nearly 50 years of his life to coffee cultivation. Today, his daughter Paola runs the farm with him, bringing a fresh perspective and valuable experience from her work as a coffee taster and buyer. Together, they manage 11 hectares of land, most of which is covered by nearly 47,000 coffee trees across a wide range of varieties. Their approach is rooted in a focus on quality, respect for the land, and a drive to constantly push the boundaries of what their coffee can offer.
This coffee is processed using the dry method, which gives it a distinctive and juicy character. After harvest, the whole coffee cherries are sun-dried, allowing the beans ample time to absorb the sweetness and fruitiness from the pulp. It is precisely this slower process that accounts for its fullness and slightly “funky” profile, which makes it so intriguing. Thanks to careful supervision of the drying process, the coffee retains its clarity while gaining depth and intensity. The resulting cup is lively, layered, and beautifully balanced, from the initial fruity notes to the longer, sweetly lingering finish.
