Colombia Bijao from Industra Coffee is an espresso that emphasizes clarity, sweetness, and excellent everyday drinkability. In the cup, it reveals juicy orange, dried apricots, and a subtle caramel finish that lends the coffee a pleasant roundness. The profile is sweet, balanced, and very comfortable, with a fuller body and gentle citrus acidity. It’s an espresso that works great on its own, but thanks to its sweetness and creaminess, it also holds its own in milk-based drinks.
The coffee comes from the La Plata area in the northern part of Colombia’s Huila region, where coffee is one of the most important pillars of the local economy and culture. The name Bijao refers to the traditional leaves used in the preparation of Colombian tamales—a typical dish of the region. This lot was created in collaboration with four producers affiliated with the AGROCOASPROSH organization, which focuses on the production of specialty coffee. The farms of the individual members are located at an altitude of 1,600–2,100 meters above sea level in the central Andes and are mostly around three hectares in size. A significant portion of the blend comes from the coffee of Fernando Garcia and his wife Alejandra, who also grow beans and peaches alongside coffee. The lot also includes the interesting Bourbon Manzano variety, known for its round cherries resembling small apples.
Processing is done using the washed method, which highlights the clarity and distinctiveness of the flavor profile. After being hand-picked, the cherries are pulped, fermented, and then washed with clean water. The coffee is then dried under controlled conditions to preserve its sweetness, juiciness, and stable structure. The result is a clean and harmonious cup with fruity freshness, caramel sweetness, and a pleasantly full body, making Bijao the ideal everyday espresso.
