The coffee originates from Colombia, specifically from the Bombonal Montañoso farm in the Huila region. The tradition of this farm was started by grandfather Edmund Alvear, who passed it on to his sons Abelardo and Javier. To this day, the Alvear family remains the heart and soul of the farm. A prime example is Abelard’s son Felipe, who, following in his father’s footsteps, absorbs the knowledge of his ancestors while striving to develop and advance the craft. The family farm, situated at an altitude of 1,840 meters, is not merely a place of production but a space for building relationships, preserving tradition, and shaping the future.
The coffee was processed using the honey method, which means that after harvesting, the husk was removed from the beans, but a portion of the sweet pulp was intentionally left on the coffee. This mucilage layer caramelizes further during the sun-drying process. Thanks to this, the coffee retains a higher sweetness and fuller body, while still maintaining the clarity and elegance typical of washed coffees. It’s a process that requires careful monitoring, but the result is a fresh, sweet, full-bodied coffee. Depending on the duration of the drying process itself, the level of sweetness in coffee processed using this method also varies.
