The coffee comes from the Las Flores farm in Colombia’s Huila region, one of the most respected coffee-growing areas in the country. The farm is run by producer Jhoan Vergara together with his brother Diego, and their name is now among the most prominent producers of experimental and high-quality micro-lots. The farm is located at an altitude of around 1,750 meters above sea level, where the combination of a mountain climate, fertile soil, and meticulous farm work creates ideal conditions for growing specialty coffee. Jhoan Vergara is known for constantly experimenting with new processing methods and pushing the boundaries of what can be achieved from a single variety and a single terroir.
This lot consists of the rare Colombian Ombligon variety, known for its distinctive aromatic potential. The beans were processed using the profile fermented method, a controlled fermentation process in which the conditions and duration of each fermentation phase are precisely monitored. This allows the producer to very precisely influence the resulting flavor profile. This modern approach highlights the coffee’s fruitiness, complexity, and sweetness while preserving its clarity and elegance in the cup.
