Behind this lot is the Peñas Blancas project, founded by brothers Jhoan and Diego Vergara of the Las Flores farm. Following the success of their own production, they decided to share their expertise with neighboring farmers and created a community project focused on producing top-tier specialty coffees. It is precisely their deep knowledge of fermentation and meticulous control of every step of processing that help create lots with exceptional clarity and complexity. Coffees from Peñas Blancas have garnered attention for their distinctive aromatics, precision, and ability to highlight the natural character of each variety.
The processing is based on meticulously controlled fermentation. The entire process begins with the use of a starter culture—a culture created from the same coffee variety—which promotes fermentation and helps develop the aromatic compounds naturally present in the cherries. The coffee then ferments in a controlled anaerobic environment, where the flavor profile develops with maximum precision. At the right moment, fermentation is halted using a temperature shock, which locks in the aromatic compounds that have formed and preserves their intensity. The result is an exceptionally clean, complex, and elegant cup with pronounced floral notes, a fresh citrus note, and a long, subtly tea-like aftertaste.
