The coffee comes from Costa Rica, from the El Vapor farm in the Tarrazú region, and is a Catuaí variety. According to the roaster, the Montero family—pioneers among small processing plants in the region—is behind this lot. Carlos Montero has dedicated his entire life to coffee farming and in 2014 founded the Don Eli processing plant, named after his father. El Vapor lies in a valley surrounded by high mountain ridges, and it is precisely the combination of microclimate, soil, and the work of local farmers that creates some of the sweetest and most complex coffees in the entire country.
This lot is processed using the dry method, i.e., as a natural. It is precisely because of the character of coffee from the El Vapor region that Jacob Montero decided to process the local cherries this way to highlight their sweetness and complexity. In natural processing, the cherries are dried whole, which allows the fruitiness, body, and pronounced sweetness to gradually permeate the bean. The result is a filter coffee that tastes clean yet has enough depth and intensity to let tropical papaya, panela, and brownies truly shine.
