This coffee comes from the Huila region of Colombia, specifically the southern part of the region, where coffee trees are grown at altitudes between 1,800–2,200 meters above sea level. The Pink Bourbon variety has been cultivated here since 2014 and quickly gained popularity for its resistance to pests, high productivity, and exceptional quality in the cup. Producers in San Adolfo and the surrounding area often choose it as a better alternative to classic varieties such as Caturra or Castillo. Pink Bourbon also stands out for its higher proportion of so-called peaberries—smaller, round beans that deviate from standard sizes but often deliver a more concentrated flavor.
The coffee is processed using the washed method, which allows its clarity and precise fruity character to shine through. Each lot is carefully analyzed both physically and sensorily before being included in the blend to ensure it matches the desired profile. The resulting coffee is named Pitaya —a reference to the dragon fruit, which often grows in close proximity to coffee trees in the Huila region. This name is no coincidence: the cup delivers precisely those vibrant, tropical flavors we associate with pitaya.
