Los Tulipanes is a coffee from Peru by the Brno-based roaster Industra Coffee, which rounds out this year’s selection from the Peruvian harvest. The dry processing has brought out a full and intense body with plenty of sweetness; in the cup, notes of plums and blackberries unfold, complemented by cocoa nibs and a long, pleasant red wine aftertaste. The fruity profile is well-structured, and the coffee tastes excellent even when chilled.
The coffee comes from the northern mountainous region of Cajamarca, specifically from the areas around the towns of Jaén and Cutervo, where production is primarily carried out by small-scale farmers cultivating land at altitudes ranging from 1 ,700 to nearly 2,000 meters above sea level. This is not a single-estate coffee, but a carefully curated selection from several growers in local communities, reflecting a shared terroir and a shared commitment to quality. Traditional varieties— Caturra, Bourbon, Typica, and Catuai—are grown here; they are well-adapted to the local climate and capable of expressing purity, sweetness, and structure. The importer’s role begins only after the harvest, when they focus on monitoring and standardizing the processing to ensure consistency across individual producers and micro-lots.
The coffee undergoes dry processing with extended anaerobic fermentation. This takes place in sealed tanks under controlled conditions and lasts 96 hours, allowing for a slow and even development of flavor complexity. Once complete, the coffee is transferred to covered African drying racks, where it spends eighteen days. To ensure that moisture is lost evenly and the flavor profile remains clean, the coffee is exposed to direct sunlight every other day in short, three-hour intervals, and the entire process is continuously monitored.
