Herchere fromKmen Coffee Roasters in České Budějovice is a washed Ethiopian coffee that beautifully demonstrates in an espresso that a fresh coffee doesn’t have to be harsh or unreadable. In the cup, you’ll find subtle notes of Earl Grey tea, sweet yellow melon, and a refreshing hint of lemon sorbet. It’s an espresso that feels light, bright, and pleasantly lively—delicate and perfect for every day.
The coffee comes from Ethiopia, specifically from the village of Herchere in the Gerba Dogo region of East Guji. Behind its production is Shonora Coffee, a family business founded in 2018 by Adugna and Morkata Shonora. The company’s name pays homage to their father, Shonora Gata, who dedicated more than 40 years to coffee and gradually built processing stations in Gerba Town and Shakicha Kebele. Today, Shonora Coffee collaborates with more than 150 smallholder farmers in the Guji region and helps produce coffees with a typical regional character —floral, fruity, and lively. This lot was produced by 220 smallholder farmers from the village of Herchere, who delivered ripe cherries to the Gerba washing station.
The variety is Ethiopian Heirloom, and the processing method is washed. After harvesting, the ripe cherries were transported to the Gerba station, where they were pulped and then fermented in tanks for 72 hours. The coffee was then thoroughly washed and sun-dried for 15 days on raised beds. During drying, the beans were turned regularly to ensure even drying, and unripe cherries were removed by hand in the initial phase. It is precisely the washed processing that gives Herchere its clarity, lightness, and tea-citrus character. The result is an espresso that is fresh, elegant, with a delicate acidity and a sweet, fruity finish.
