Thebold and juicy acidity gives this Colombian coffee a truly lively character. The flavor combines sweet lemons, cranberries, and notes reminiscent of orange wine, creating a modern and very fruity profile. However, the cup as a whole doesn’t come across as overly wild or overly acidic—the finish reveals a gentle creaminess and sweetness reminiscent of a chocolate milkshake, which beautifully rounds out the coffee. The Pink Bourbon variety showcases its typical elegance, distinctive aroma, and clean flavor profile, making the coffee intense yet still very well-balanced.
High-altitude farms in the Colombian regions of Tolima and Cauca provide ideal conditions for growing specialty coffee with a complex flavor profile. This is where this lot comes from, grown by farmer Diego Samuel, who works with the Pink Bourbon variety at altitudes between 1,850–1,960 meters above sea level. The cooler climate and slower ripening of the coffee cherries help develop intense sweetness and more pronounced acidity. Thanks to the local conditions, Pink Bourbon takes on a clean, distinctly fruity, and very elegant character here.
The resulting flavor profile is the result of a washed processing method supplemented by double fermentation and thermal shock. After careful selection of ripe cherries, controlled fermentation takes place, which helps highlight the coffee’s fruitiness and sweetness. The beans are then subjected to a rapid temperature change—a thermal shock—which stabilizes the flavor profile and helps preserve the purity and intensity of the aroma. Thanks to this precise process, the resulting cup is very clean, juicy, and elegant.
