This Ethiopian espresso from The Naughty Dog has a balanced, sweet, and very distinct profile. The coffee has medium acidity, a fuller body, and a smooth but definitely not flat taste. Behind this lot from the Yirgacheffe region is farmer Tigist Abyot Beraso, who is part of the Women Productions project and has long been involved in growing select Arabica beans at higher altitudes around 1 , 800 meters above sea level . The coffee cherries are hand-picked at optimal ripeness with an emphasis on quality, careful work with farmers, and a clean, consistent expression of the coffee, which is also clearly reflected in this lot.
The coffee is processed using the natural method, in which the whole cherries are dried together with the pulp. This method of processing promotes sweetness, full body, and the development of fruity tones without the coffee losing its balance. The Kurume and JARC varieties used are typical of Ethiopia and contribute to the resulting sweet and harmonious flavor.
