The coffee from Lucrecia Maceto's El Jardín farm comes from the Alto Guayabos region in Tolima, Colombia, and is part of the Siruma project, which aims to empower women in the coffee sector and expand their access to the market. Lucrecia is building on her father's experience while also studying agronomy so she can further develop the quality of production. She is actively involved in sharing know-how among female growers and strengthening their position in the community. As she herself says, "From an early age, I learned that coffee is not only grown with your hands, but also with your heart."On the slopes of her farm, she grows Colombia and Castillo varieties, with an emphasis on carefully picking only ripe cherries.
The washed processing emphasizes its sparkle and purity. After sorting, the cherries are left to rest for 12-24 hours in an open tank without water, then peeled and fermented for approximately 24 hours; for the Colombia variety, fermentation is extended by four hours due to the higher sugar content. This is followed by double washing and drying in a solar dryer. This precise process highlights the fresh acidity, clear fruitiness, and juicy sweetness, while the body remains light, clean, and elegantly rounded.
