Geisha beans are carefully harvested only when fully ripe to preserve their natural sweetness and aroma. This is followed by a two-stage fermentation process – first for 48 hours in whole cherries, then for another 48 hours after the skins have been removed. After fermentation, the coffee is slowly dried on African beds in parabolic dryers until it reaches the ideal moisture content of around 10%. This process enhances its purity, complexity, and delicate flavor structure.
