Behind this lot are approximately 300 farming families from the Paraná and São Paulo areas, specifically from the Pinhalao region of Brazil. The farms, ranging in size from 5 to 100 hectares, are located at an altitude of 800 to 1,000 meters above sea level, where the stable climate and abundant sunshine promote the natural sweetness and fullness typical of Brazilian coffees. Classic varieties such as Mundo Novo, Bourbon, Catuaí, Acaiá, and Caturraare grown here ,a blend that creates a harmonious and consistent flavor profile. Hand-picking and careful sorting of the cherries are a matter of course. Every step is guided by a commitment to quality that stands up even without the caffeine "kick."
The base of this coffee is processed mainly using the natural method,with the cherries dried for 7–10 days on terraces after harvesting, which emphasizes the sweetness, full body, and chocolate character of the cup. This is followed by the removal of caffeine from the coffee using theSparkling Water process, whichuses natural carbon dioxide and water. This gentle and organically certifiable method selectively removes only the caffeine without disturbing the flavor and aromatic substances. The green beans are first moistened to open their cell structure. They are then exposed to pressurized CO₂, which, in combination with water, acts as a natural "sparkling solvent" for caffeine. The process is repeated until the desired caffeine level is achieved, after which the beans are gently dried back to their original moisture content. The result is a pure, authentic flavor profilewithout caffeine.
