The Rancho Grande farm has been growing coffee since 1933, when Aneite Reis inherited 5 hectares of coffee trees. Today, it is run by his son Jose Carlos Reis and grandson Flavio (Fafa) Reis, who are continuing the family tradition and further improving the quality of the coffee produced. In addition to growing coffee, the farm also raises cattle for milk and meat production. It places great emphasis on employee care and nature conservation. Several workers live directly on the farm in subsidized housing. The farm invests in modern technologies, such as static drying boxes, which allow for better control of the drying process and the resulting taste of the coffee. After harvesting, the coffee is sorted in a water mill and then dried for 16 days at a temperature of 29 °C. Once it reaches a moisture content of 11.7%, it rests for 31 days, then is hulled and sent to the COCATREL warehouse. Some of the coffee is dried on terraces and finished in a rotary dryer. Thanks to precise processing and constant innovation, the farm continues to improve the quality of its coffee.

Thenatural method is often used in areas with water shortages, especially in Africa and dry areas of Latin America, such as Brazil. In dry processing, the cherries are spread out on concrete surfaces or beds and dried in the sun or using dryers. The coffee is turned regularly to prevent mold and unwanted fermentation. Once drying is complete, the husk is mechanically removed in a dry mill. Dry processing adds characteristic flavor elements to the coffee that are independent of the variety or terroir. Properly executed drying brings fruity notes and a creamy body to the cup.
