Kmen’s fifth anniversary calls for something more special than just a cake and candles. That’s why Kmen Coffee Roasters’ limited-edition Diego Samuel Bermudez birthday blend brings one of the most famous coffee varieties— Geisha—to the celebration. The cup is dominated by pronounced floral notes of jasmine, elderflower, and neroli, the flower of the bitter orange. Gradually, sweet, ripe nectarine joins the aromatic profile, adding a fruity juiciness and pleasantly balancing its more delicate floral notes. The result is an elegant, fragrant, and distinctive pour-over coffee that’s more than perfect for a birthday toast.

Behind this coffee is Diego Samuel Bermudez, who, along with his family, has been growing coffee for 14 years in the Cauca region of Colombia. His farm, Finca El Paraíso, is located near Piendamó at an elevation of about 1 ,780 meters above sea level and spans 1.7 hectares of fertile soil. Diego doesn’t limit himself to just growing coffee. He built a laboratory right on the farm where he and his family roast and taste coffee, and he has long been dedicated to researching fermentation, microbiology, and other processes that influence the final flavor. Since 2015, his coffees have won numerous international awards and are now exported to more than 86 countries. This particular lot consists of the Geisha variety, which is known in local growing conditions for its delicate, aromatic, and distinctly fruity character.

Processing begins with the selection of fully ripe to overripe cherries, which are then disinfected using ozone. The whole cherries then undergo a 72-hour anaerobic fermentation using yeast in a pressurized environment. After fermentation, the cherries are dried in a dehumidification system, which allows for a gentle reduction in moisture content while providing better control over oxidation and the fermentation process. The coffee is then allowed to rest in a cool environment to stabilize, and only then does it undergo final sorting and hulling. Although the lot is labeled as “natural,” it is a very precisely controlled process aimed at preserving the delicate aroma of Geisha and further highlighting its floral and fruity character.
