Peru DEMÓSTENES TANTALEÁN from PLOT Roasting is a coffee that combines distinctive floral and fruity notes. In the cup, you’ll find cherry blossom and jasmine, complemented by the juicy flavor of a Pink Lady apple. In the background, a sweet flavor emerges, reminiscent of a Bakewell tart, a traditional British cake with an almond filling and a fruit layer. The entire cup is complemented by a pronounced sweetness and a subtle baked note, which lends it an interesting depth. Behind this coffee is Demóstenes Tantaleán Acuña, who represents the second generation of his family dedicated to coffee farming. He grew up surrounded by coffee and gradually developed his own relationship with it. He therefore decided to focus on quality over quantity and began growing less common varieties, including Gesha, on his farm, La Malquerida. The farm is located in the Tacabamba area of the Cajamarca region, at an elevation of 1,950 meters above sea level. Demóstenes primarily uses organic fertilizers here and avoids chemical herbicides when tending to the farm. He removes weeds by hand using machetes and brush cutters. His approach thus combines traditional farming methods with an emphasis on the quality of specialty coffee.
The processing of this lot differs slightly from that of classic washed coffees. After being hand-harvested, the ripe cherries are first sorted using flotation, then hulled, and transferred to tanks where they ferment for 36 hours in an oxygen-free environment. This method of fermentation allows for better control over the entire process and helps shape the final flavor profile. After fermentation, the beans are washed to remove any remaining pulp and then slowly dried in a solar dryer. Careful monitoring of each step helps preserve the lot’s quality while allowing the Gesha variety to shine.
