Sweet, tropical, and beautifully balanced—that’s Colombia HUILA from the Warsaw-based roastery Trigger Roastery. The first flavor to emerge in the cup is a distinct taste of ripe banana, complemented by juicy mango and pleasantly rounded out by the sweetness of toffee. The fruit notes come through distinctly yet remain balanced, while the caramel undertones provide a softer, sweeter finish. The result is an approachable and easy-to-drink filter coffee that showcases Colombia’s tropical character without any wild fermentation notes.
The coffee comes from Peñas Blancas in the Huila region and is produced by Nestor Lasso and Jhon Vergara. The Castillo variety grows here at an elevation of 1,650 to 1,800 meters above sea level, and only fully ripe coffee cherries are hand-selected for this lot. Castillo is a variety prized, among other things, for its hardiness, and in this case, it produces a clean, sweet, and balanced profile. The coffee received an SCA score of 86 points, and Trigger roasts it for drip brewing with an emphasis on sweetness, fruitiness, and ease of everyday preparation.
After harvest, the natural processing method begins, during which the selected cherries are dried whole—that is, with the skin and pulp intact. In Peñas Blancas, drying takes place on raised beds for approximately 25 to 30 days under controlled conditions. Throughout the process, temperature and humidity are monitored, and the cherries are turned regularly to ensure even drying and keep fermentation under control. The carefully managed natural processing here primarily enhances the ripe, fruity sweetness and helps bring out notes of banana, mango, and toffee without overshadowing the coffee’s own character.
