The base of the blend comes from the Indonesian island of Sumatra and consists of Catimor beans. Coffee cultivation on Sumatra dates back to the 17th century. Today, Robusta is grown across much of the island, but there are also many farms that continue to cultivate various Arabica varieties, such as Catimor or the Hybrido de Timor variety, which was specifically bred for the region. The second coffee is Pink Bourbon from the Huila region of Colombia. Thanks to its elevation, tropical climate, and volcanic soil, this region in southwestern Colombia is ideal for growing coffee. The area is characterized by smaller family farms, which produce unique cups of coffee through careful hand-picking.
The Catimor variety from Sumatra underwent traditional wet-hulled processing ( Giling Basah). After being handpicked and carefully sorted, the coffee cherries are hulled, washed, and left to partially dry in their parchment. The parchment is then removed, and the beans are dried to the desired moisture content. The resulting coffee has a full body with sweet notes. The Colombian Pink Bourbon underwent an experimental co-fermentation process with rose water. The resulting coffee is a balanced blend offering sweetness and a delicate floral aroma.
