Ethiopia Sirius from the Warsaw-based roastery Trigger Roastery is an espresso that combines fruity juiciness with pronounced sweetness and a fuller body. The flavor profile features pear, strawberry, and caramel, so the espresso begins with a fresh, fruity impression and gradually transitions to a sweet, rounded finish. The pear adds lightness, the strawberry brings out a more pronounced fruitiness, and the caramel ties everything together nicely. Although this is a naturally processed Ethiopian coffee, the profile remains clean and precise, without any heavy fermented notes. On its own, it works as a sweet and juicy modern espresso, but it also pairs well with milk, where the caramel and strawberry notes come through even more distinctly.
The coffee comes from the Gatta farm in Ethiopia’s Sidama region and is produced by the Dukamo family. The Dukamo brothers began with the conviction that Sidama coffees deserve more attention, and over the course of fifteen years, they have built a network of three farms, 42 processing stations, and six dry mills. This lot consists of varieties 74110 and 74158. The coffee trees are planted in the shade of native trees, some of which are over two hundred years old. The high altitude and cooler conditions slow the ripening of the cherries, which enhances their sweetness and more pronounced fruity character.
Sirius undergoes the Sleeping Bag Natural processing method. Ripe cherries are first carefully sorted and then dried outdoors in sealed bags, which slow the loss of moisture. This allows for a more gradual drying process, enabling the flavor to concentrate without the coffee becoming overly fermented. It is precisely this process that gives the resulting espresso a fuller sweetness and intense fruitiness, while at the same time preserving a clarity that is not always a given in natural coffee. Pear and strawberry bring juiciness, while caramel rounds out the entire profile and creates a long, sweet finish.
