Small-scale farmers grow coffee in the vicinity of the village of Zebigi. They are assisted in their work by the so-called QC Lab—a laboratory that monitors the quality of their harvest, helps improve their processes, and thus enables them to achieve fairer prices. This laboratory, along with the processing stationThe Coffee Gardens, was co-funded by the Father’s roastery. The coffee comes from elevations of 1,800–2,200 meters above sea level, which, together with the cooler climate, volcanic soil, and diverse natural environment, contributes to slower ripening of the coffee cherries and more intense flavor development.
This coffee is a blend of three varieties, each contributing its own unique characteristics.SL14lends it delicate citrus notes,SL28brings juiciness and fruity sweetness, andNyasalandfrom Malawi adds elegant tea-like notes. Together, they create a perfectly harmonious symphony of flavors. After harvesting, the beans undergo a process known as dry fermentation, in which they are left to ferment without the addition of water after the husk is removed. This process enhances the coffee’s sweetness while preserving its bright acidity and complex, rich flavor.
