Behind every bean of this coffee lies a powerful story from the slopes of Mt. Elgon in eastern Uganda. It is named after Job Namugowa, the head of the washing station, who personally oversees every step of production with precision. The project was launched under the banner of The Coffee Gardens, an organization that collaborates with local farmers based on the principles of maximum transparency, ethics, and sustainability, including projects to reforest farms. This coffee reaches your hands thanks to the Czech roastery BirdSong Coffee, led by co-founder Dana. Their shared goal is to bring coffee that not only tastes great but also has a positive impact on the community and nature from which it originated.
What makes this coffee truly unique is its extremely labor-intensive, 140-hour processing. The entire process begins with a 100-hour dry fermentation of whole cherries in tanks, followed by hulling and another 40 hours of fermentation in ice-cold spring water. This combination of methods (known as cherry ferment andwashed) gives the coffee a unique character: while the long dry fermentation imparts an intense aroma and the sweetness of red fruit, the subsequent washing ensures a clean flavor profile and that famous juiciness.
